Variety : 100% Nebbiolo
This Barbaresco comes from the vineyard in Neive and is 350 meters above sea level. The soil is with marl calcareous with a South exposure. The vineyard is composed exclusively old Nebbiolo. A traditional vinificiation of the grapes for 12 days with several pump overs during the day and a controlled temperature of 30/ 35 ° C to optimize extraction. After a rest in stainless steel for 5 months the wine matures in oak for 24 months then is left to age in the bottle until being sold.
A ruby red colour with garnet reflexes. On the nose wild roses, raspberries and cinnamon. In the mouth it is dry and warm with sensations of vanilla, tobacco, leather and green tea leaves.
Food: Pairs with red meats, cheeses and it excellent as a meditation wine. organic, Piemonte . Very Low stock.

Grape: 100% Vernatsch/Schiava. Schiava is a Alto Adige variety that was long underrated to the point of being almost forgotten, just like the old limekiln after which the vineyard is named. Elegant power has enabled Kalkofen to rise phoenix-like from its ashes and cast a stylish spell over the world. The wine’s versatility and grace will tempt you to drop the pearl of your soul into a glass of this nectar.
VINIFICATION : the small Vernatsch grapes come from the oldest vines in the vineyard, and were selected by hand for this wine. The fermentation began spontaneously in the wooden fermentation vat, with a ten-day maceration period. Following an eight month maturation period in barrique and big wood barrels, the wine was bottled in late-April.
TASTING NOTES: this wine is a pure pleasure. Luminous ruby red, fruity aromas of forest berries and cherries, velvet tannins with a unique structure and minerality make this wine unique. An ideal wine to accompany light Mediterranean cuisine.

Hand-harvested in early October. Fruit is pressed and then fermented in stainless steel tanks for 35- 40 days during which full malolactic fermentation occurs. Aged for 24 months as regular Brunello Ridolfi and then another 8 months in large Slavonian oak barrels , after wine rest for additional 12 months in bottle.
