Chablis 1er Cru "Beauroy"
Domaine Mosnier
Four generations farming the same hillside in Chablis. This is their Premier Cru parcel. Lime blossom, citrus, fresh almonds, and a long marine-tinged finish. The salinity comes from the limestone. You'll taste it.
Pair with Oysters, scallops, blanquette de veau

Barbaresco DOCG
Bonardi
Same grape as Barolo. 40 to 60-year-old vines. 24 months of aging. Violet and rosehip on the nose, then menthol and spice. The tannins grip your palate and don't let go. Open it an hour before you serve it.
Pair with Braised short ribs, osso buco, aged Parmigiano

Sancerre
Franรงois Reverdy
This is what Sauvignon Blanc tastes like at the source. The Loire Valley invented this grape. Reverdy farms a tiny organic parcel by hand, native yeasts, no shortcuts. Citrus zest, white peach, crushed shells. Forget anything you've had from New Zealand. This is the original.
Pair with Goat cheese, oysters, sushi, grilled vegetables

Beaune "Les Mariages"
Domaine Besancenot
The vineyard is named after a local tradition. Wedding parties in Beaune would walk through this site after the banquet and cross paths. Real village Burgundy, 20 to 24 months in oak. Red cherry, kirsch, raspberry. Firm but juicy, fine tannins, long finish.
Pair with Roast duck, pork tenderloin, mushroom dishes

Pouilly-Fuissรฉ "Plaisance"
Domaine Thierry Drouin
A producer I've stood next to in his vineyard. Limestone slopes of Vergisson, aged on fine lees. Lemon curd, pear, white flowers, wet stone. Same grape as the Chablis above, completely different wine. That's the magic of where it comes from.
Pair with Roast chicken, seared scallops, creamy pasta

Bolgheri "Bridges"
Etrusca
Bolgheri is the home of the Super Tuscan. Cabernet Sauvignon, Merlot, and Petit Verdot, organic farming, aged up to 24 months in oak barrique. Black cherry, plum, violet, sage. Velvety tannins, polished finish. The bottle to hold for a cooler night.
Pair with Grilled steak, lamb, hard aged cheeses
