Production area: Bolgheri, Toscana region, provinces of Livorno, Italy. Bolgheri is a relatively young and most prestigious Italian Appellation. It is known mainly for deeply coloured, supple yet age worthy red wines, usually based on the Bordeaux grape varieties. A wine must also be aged for at least two years with a minimum of one year in oak barrels. And as each winemaker ultimately decides on their final ‘recipe,’ it makes for an enjoyable, and possibly decadent, way to discover what Super is. Villa Antinori is a mid-weight red blend of mostly Sangiovese, with small amounts of Merlot, Cabernet Sauvignon and Syrah from vineyards across a number of appellations within Tuscany. A delicious bottle of wine. Beautiful ruby in the glass, no bricking. Very fruit forward, delicious notes of black cherries with a hint of citrus, and velvety smooth. Tastes like it could cost twice as much and you would still be impressed. Smoky, pruny, gamey, sweaty saddle leather, black cherry, tobacco nose. Rich, dry, slightly chunky and tight palate. Peppery, smoky, prune, chocolate, resin, mineral, vanilla flavours with a distinctly meaty, cassis note on the finish. A bit chunky but very good effort for the vintage.

It is refined in small oaken barrels with 500 l capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of this process, it is bottled without filtering to preserve its maximum integrity. It is then refined in the bottle for at least 4 months. Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. Francis Coppola acquired much of the property and began reconstructing the estate back in the mid-1970s. Located in Rutherford, this is an exemplary place for Bordeaux varietals in California. The name "Rubicon" is a classical reference to Caesar's march on Rome--'the crossing of the Rubicon'--meant to suggest a point of no return, appropriate for Niebaum-Coppola's flagship production. NAPA style Cabernet Sauvignon Reserva.  Winemaking:  our Cabernet grow up in the Langhe and Roero hills. Once the grapes achieve the right ripeness degree, the harvested bunches are transported to the cellar where they are carefully selected and destemmed.  Softly pressed it stored in steel tanks for the first fermentation phase when the colour, aromas, tannins and structure from the skin of the berries are extracted.  After this first phase, they are separated and  transferred to tonneaux and barriques. Malolactic fermentation takes place inside the barriques and tonneaux, where they remain  for at least 18 months. In the following months the wine refines through the exchange of oxygen allowed by the porosity of the wood, which softens the tannin making it less invasive and more elegant and enriching the wine with a greater complexity of aromas such as the hint of vanilla typical of oak. Winemaker notes: An austere, complex, generally very aromatic wine, which expresses all the wonders of the forest and the pristine mountains. On the nose, mainly emerge wild berries, black cherry, plum, perfectly integrated with the vegetable scents of the undergrowth, musk, pine needles, oak leaves. But a more careful analysis will reveal the more material organoleptic characteristics, linked to the rock, graphite often with balsamic puffs, black pepper and ink. Flaviana Fia
