This is the holiday-table box. Grower Champagne to open, a ten-year-old Italian white most people never get to taste, then four serious reds from the great addresses: Gevrey-Chambertin, the Tuscan coast, Montalcino, and Barolo.

Grower Champagne, meaning the Loison family farms the grapes and makes the wine themselves. 100% Chardonnay, built on the 2017 harvest with 40% older reserve wines blended in for depth. Citrus, a salty mineral edge, fine and elegant. Every good night starts with bubbles, so this one is first. Serve it properly cold.
Pair with Oysters, fried anything, salty snacks, the first toast

Bellaria
A white with more than a decade in bottle, which almost nobody gets to drink. Bellaria picks the grapes in three passes, early for acidity, at full ripeness, and late for concentration, then blends them into one wine. Citrus, apple, and pear, with a savory, lightly honeyed finish that only age gives. Pour it a little warmer than the Champagne so it can open up.
Pair with Seafood, roast vegetables, white meats, fresh cheeses

Village Burgundy from the most structured address in the Cรดte de Nuits. Black cherry, blackberry, cassis, and violet, then licorice, pepper, and an earthy note underneath. It is the first red because Pinot Noir is about detail, and you want a fresh palate for it. Charming now with some air, and it will keep 5 to 10 years if you would rather wait.
Pair with Duck breast, mushroom dishes, roast lamb

Fourteen years old and drinking at its peak. Cabernet Sauvignon, Sangiovese, and a touch of Merlot that have had time to knit together: black cherry, blueberry, cedar, and spice, finishing long with tobacco and balsamic warmth. Time has polished the tannins, so it comes before the two younger, firmer reds. Stand it upright for a day and pour gently.
Pair with Bistecca, braised short ribs, aged pecorino

Sofia, exclusive to The Simple Wine
Our own label, made in Montalcino and sold only through us. 100% Sangiovese, organically farmed, aged 36 months in oak. Ripe cherry, a little chocolate and spice, harmonious and built to age. This is the new vintage, so it is young. Open it an hour or two ahead, or put it away for a few years and thank yourself later.
Pair with Red meats, game, rich pasta, aged cheeses

The closer. 100% Nebbiolo from a small family estate, vines 30 to 40 years old, aged over two years in French oak. Cherry, violet, dried herbs, and the firm tannins and long savory finish Barolo is famous for. Nothing can follow it, so it goes last. Decant it, give it time, and serve it with the biggest dish of the season.
Pair with Steak, braised meats, truffle pasta, mushroom risotto
