On the palate it is elegant and medium-bodied with smooth tannins and a long, balanced finish. About 40% of the wine ages in oak barrels for six months, adding subtle warmth and depth to its fruit character. The wine’s versatility and grace will tempt you to drop the pearl of your soul into a glass of this nectar.  VINIFICATION : the small Vernatsch grapes come from the oldest vines in the vineyard, and were selected by hand for this wine. The fermentation began spontaneously in the wooden fermentation vat, with a ten-day maceration period. Following an eight month maturation period in barrique and big wood barrels, the wine was bottled in late-April. TASTING NOTES: this wine is a pure pleasure. Luminous ruby red, fruity aromas of forest berries and cherries, velvet tannins with a unique structure and minerality make this wine unique. An ideal wine to accompany light Mediterranean cuisine.

A ruby red colour of a medium intensity; at the nose perfumes of mature fruit and marked sensations of sour cherry and currants, perceptions of tobacco; warm in the mouth, full with elegant Vanilla, scents of tobacco, liquorice wood and fruity undergrowth. Grape variety: Dolcetto, Pinot Nero, Nebbiolo & Barbera The Dolcetto comes from the area of Calupo, in Rodello. The Giribaldi vineyard is situated at the peak of a hilly area, 500 meters above sea level, with a Southwest exposure.The soil is Marl Calcareous with a good permeability. The Pinot Noir comes from the same area in Rodello; the Nebbiolo grapes come from Montelupo Albese in a perfect South exposure on hilly ground composed of medium marl calcareous soil; and the Barbera grapes come from Alba, at 350 meters above sea level. The training system is Guyot with 5,500 vines per hectare. This blend is obtained from the vinifications of Dolcetto, Barbera, Nebbiolo, and Pinot Noir grapes. Vinification is carried out in the traditional way - submerging the skins, at a controlled temperature of 30 °C ( in such a way as to obtain a good extraction of colour and and to maintain tannins) for a period of 7 days. The wine then undergoes a period of 24 months in tonneaux and barrique.

Variety : 100% Schioppettino, a very special grape/wine; Planted 1976-2000. Very elegant and full of taste wine. The grapes are collected on the basis of sensory analysis in the pre-harvest period: maximum maturation of skins and tannins is sought. This wine ferments at a controlled temperature of 26°C. It remains on its skins for a period of 20 days during which the of color and structure are extracted. It is refined in small oaken barrels with 500 l capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of this process, this wine is bottled without filtering to preserve its maximum integrity. It is then refined in the bottle for at least 4 months.
