Summer was all whites and an ice bucket. Fall is the other way around. One white Burgundy to open the box, then five reds that climb from bright and easy to deep and warming, built for braises, roasts, and the first night you actually want the oven on.

Domaine Thierry Drouin
Thierry Drouin is back. If you had his Virรฉ-Clessรฉ this summer, this is the brighter sibling from elsewhere in the Mรขconnais. Pear, pineapple, and white flowers, a citrus-driven palate, and a little roundness from time on the lees. The only white in the box, so it goes first. Open it while dinner is still cooking.
Pair with Roast chicken, pasta primavera, creamy cheeses

The red Piemonte actually drinks at home. 100% Barbera: violet and cherry on the nose, ripe red fruit, a little spice, and the fresh acidity the grape is known for. Twenty months in barriques and tonneaux round it out without weighing it down. The easiest step from white into red.

Tiare
Cabernet Franc from the gravel soils of the Collio, up against the Slovenian border. Aged twelve months in stainless steel, no oak, so you taste the grape: cherry, green pepper, sage blossom, red plum. Silky and full without being heavy. It sits third because it has more body than the Barbera but none of the oak of what comes next.

The young Super Tuscan in the box. Mostly Cabernet Sauvignon with Merlot, organically farmed, aged 12 to 16 months in oak barrique. Dark berries and ripe cherry, fragrant spice, velvety tannins, a polished finish. Remember it, because bottle five is what this style turns into with a decade of patience.

Fourteen years old and drinking at its peak. Cabernet Sauvignon, Sangiovese, and a touch of Merlot that have had time to knit together: black cherry, blueberry, cedar, and spice, finishing long with tobacco and balsamic warmth. Pour it next to your memory of the Pierofosco and you can taste what time does. Stand it upright for a day and pour gently.

They call it Baby Amarone for a reason. The wine is re-fermented on the skins left over from Amarone, which adds body, color, and warmth, then aged a year and a half in large Slavonian oak. Cherry and currant, soft, generous, and long. The richest bottle in the box, so it closes the night. Save it for the first truly cold evening.
