Gavi GOLD DOCG
Ciabot, Black Label
Organically farmed Cortese from Gavi, the corner of Piemonte that makes Italy's answer to Chablis. Lemon, green almond, and a saline mineral snap. The GOLD label is the precise, textured version. Open it cold the night the box lands.
Pair with Oysters, fried calamari, anything off the grill with lemon

Pecorino "Hydria" DOC
Antonini
Pecorino is the grape, not the cheese, and it nearly disappeared before a handful of Abruzzo growers brought it back. White peach, a little lavender, a honeyed weight that still finishes dry. More texture than the Gavi, so it comes second.
Pair with Grilled shrimp, roast chicken, summer pasta

Bliss Blanc, Chablis Style
Bonardi, a Simple Wine project
Our own project with the Bonardi family. Chardonnay grown in the chalky Langhe hills and made the Chablis way: unoaked and clean. Green apple, citrus, a stony edge. Easy on its own, better with food.
Pair with Sushi, light fish, soft cheese

Virรฉ-Clessรฉ "Plaisance"
Domaine Thierry Drouin
Real white Burgundy from one of the top villages in the Mรขconnais, the warm southern end where Chardonnay ripens fuller. Citrus, yellow stone fruit, a clean mineral line. The richest white in the box, so pour it after the others.
Pair with Roast chicken, creamy pasta, grilled corn

Dogliani DOCG
Bonardi 1890
100% Dolcetto, the everyday red of Piemonte. Dark berry, low acid, soft tannin. Chill it 20 minutes and it drinks beautifully outside in July. This is the bridge from whites into reds.
Pair with Pizza, burgers, charcuterie, weeknight pasta

"RedMont" Merlot 2017
Ferruccio Sgubin
100% Merlot from old vines in the Collio hills, planted between 1967 and 2000. Almost a decade in, it's plush and settled: plum, dark cherry, a touch of tobacco. The dinner red. Open it an hour early and save it for the last glass of the night.
Pair with Steak, braised meats, aged cheese
