VINTAGESummer 2015 was characterized by higher than average temperatures and lack of rainfalls. The weather situation induce us to an early harvest epoch thoughts. The heat, however, did slow the grapes development therefore we had an average harvest’s epoch which began on September 1 and ended on October 27. We immediately recognize the potential of an absolutely promising vintage when we saw the grapes quality brought to the cellar. The whites wines show enveloping and caressing fruit features
VINIFICATIONTwelve hour cold maceration in contact with the skin, fermentation in stainless steel, five months on the fine lees.
LOCATION / SOILHöfl unterm Stein in Söll near Tramin, at about 550 m above sea level. Heavy, loamy, chalky gravel with extremely low yields.

Grape: 100% Vernatsch/Schiava .Schiava is a Alto Adige variety that was long underrated to the point of being almost forgotten, just like the old limekiln after which the vineyard is named. Elegant power has enabled Kalkofen to rise phoenix-like from its ashes and cast a stylish spell over the world. The wine’s versatility and grace will tempt you to drop the pearl of your soul into a glass of this nectar.
VINIFICATION : the small Vernatsch grapes come from the oldest vines in the vineyard, and were selected by hand for this wine. The fermentation began spontaneously in the wooden fermentation vat, with a ten-day maceration period. Following an eight month maturation period in barrique and big wood barrels, the wine was bottled in late-April.
TASTING NOTES: this wine is a pure pleasure. Luminous ruby red, fruity aromas of forest berries and cherries, velvet tannins with a unique structure and minerality make this wine unique. Riesling/Sauvignon Blanc blend. Vinification : The Riesling was produced by pressing whole grapes and fermenting them in stainless steel vats. The grapes of the Sauvignon were macerated for twelve hours prior to pressing, then a part of the must was placed into barrels for fermentation. All of the wines were stored for eight months on the yeast before beginning the assemblage in March. The wine has been in the bottle since April. Tasting notes: The wine presents a bright, green yellow with golden reflections. The nose is evocative of gooseberry peaches, pineapple and passion fruit. On the palate, it reveals a lively flavor full of finesse, minerally texture and juicy acidity, with citrus fruit in the aftertaste with exotic echoes.

Why it’s specialArzio is the flagship red from Baron di Pauli’s Arzenhof estate in Caldaro, Alto Adige (northern Italy near the Alps). It is a Bordeaux-style blend grown on mineral-rich slopes above Lake Caldaro. The 2011 shows over a decade of quiet development with dark cherry, graphite, cedar, and cocoa in balanced form.
Taste and textureDark ruby color. Ripe black and red fruit, violet, sweet spice, and a touch of cocoa. Fine-grained tannins and a cool mineral finish give length and composure.
