Very rare wine, very low stock. After hand harvesting in mid September and careful hand selection only the best grapes are placed in small wooden crates and set aside to dry for 3 months. Then the grapes are softly pressed by natural gravity and left to slowly ferment. Aged partly in large Slavonia oak barrels and partly in small barrels for 5 years. If stored well, this Amarone can maintain its characteristics for another 20-25 years. This Amarone has an intense garnet-red color. It is fruity with black cherries and prunes and contains a bouquet of dried flowers and a hint of sweet spices. The  wine is well structured and has a sense of mellowness, contrasted by velvety and rich tannins. Food coupling: Traditionally served with game, grilled and braised meat, and well matured cheese . Please use vintage wine opener and decant wine after opening . Grape varieties: 60% Corvina Verones, 25% Corvinone, 15% Rondinella Average age of vines: 30+ years.

This skillfully blended, dark ruby-red, baby Amarone produces sweet and fruity notes. A soft and incredibly smooth bouquet of red berry fruits, such as cherry and currant. In the mouth it is well bodied, generous, warm, and long-lasting. Extremely tasty wine. Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large Slavonia oak barrels for 1.5 years. After this, the wine rests for six months in its bottle.  Serving Temperature: 62-66 °F / 17-19° C in large glasses. Aromas of tilled earth, Asian spice and mature black-skinned fruit come together on this hearty red. Mirroring the nose, the robust palate evokes dried cherry marinated in spirits, ground pepper and a dollop of vanilla. Handpicked in September, the grapes are dried gently in well ventilated rooms for around 3-4 months, concentrating their flavours, sweetness and colour. In winter, the grapes are crushed, fermentation starts with natural yeast and then the must is filled into 500-1000 litre oak barrels to finish. The wine matures in wood for 30-36 months before bottling. Food-Wine Pairing: Steak, pork based stews, and game are its natural accompaniments Grape: 65% Corvina, 15% Corvinone + 10% Rondinella + 10% other varieties grown in Bastia in the Veneto region of North Eastern Italy.
