After hand harvesting in mid September and careful selection, the grapes are placed in small wooden crates and set aside to dry for 3 months. Then the grapes are softly pressed and left to slowly ferment. Aged partly in large Slavonia oak barrels and partly in small barrels for 5 years. If stored well, this Amarone can maintain its characteristics for another 15-18 years.
This Amarone has an intense garnet-red color. It is fruity with black cherries and prunes and contains a bouquet of dried flowers and a hint of sweet spices. The Amarone is structured and has a sense of mellowness, contrasted by velvety tannins.
Food coupling: Traditionally served with game, grilled and braised meat, and well matured cheese
