Nero Viola This skillfully blended, dark ruby-red, baby Amarone produces sweet and fruity notes. A soft and incredibly smooth bouquet of red berry fruits, such as cherry and currant. In the mouth it is well bodied, generous, warm, and long-lasting. Extremely tasty wine. Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large Slavonia 500/1000 oak barrels for 18 months. After this, the wine rests for six months in its bottle.  Serving Temperature: 62-66 °F / 17-19° C in large glasses. The grapes for this wine are harvested exclusively by hand starting in mid September. After careful selection, the grapes are placed in small wooden crates and set aside to rest and dry. Around the end of January, the grapes are slightly pressed, and begin to ferment slowly. Mirroring the nose, the robust palate evokes dried cherry marinated in spirits, ground pepper and a dollop of vanilla. Handpicked in September, the grapes are dried gently in well ventilated rooms for around 3-4 months, concentrating their flavours, sweetness and colour. In winter, the grapes are crushed, fermentation starts with natural yeast and then the must is filled into 500-1000 litre oak barrels to finish. The wine matures in wood for 30-36 months before bottling.
