Located north of Beaune at the highest point of the hillside, our Beaune à l’Ecu 1er Cru benefits from limestone soil. The smallest plot in Beaune, there are only 3 owners who share it with us. The name “à l’Ecu” probably comes from the Middle Ages: this enclosure allowed the owners of the time to pay the royalties they owed to the Dukes of Burgundy. The vinification is carried out in the greatest tradition with hand sorting of the grapes to guarantee greater quality. The wine is vinified between 2 and 3 weeks in order to obtain all the richness of the terroir. It is then aged in oak barrels aged 2 to 5 years for 20 to 24 months to guarantee real authenticity.Tasting/food and wine pairing. On this terroir, Pinot Noir reveals a very elegant fruity and velvety expression. The color is bright, the nose is fresh with notes of very pure red and black fruits. On the palate, the suppleness of the tannins gives a nice balance and a certain roundness. Ideal to enjoy in its 4th year, its aging potential is 15 years. It will be enjoyed with red meats, terrines or cheeses such as briasavarin.
