WINEMAKER NOTES:The Coach Insignia honors our family's tradition of craftsmanship, first represented in fine automobiles of the 20th century with Body by Fisher and now in Fisher Vineyards' wines of the 21st century. The Coach Insignia Cabernet represents the pinnacle of our winemaking craft, comprised of the finest selected lots of Bordeaux varietals from our Napa Valley Estate RP(92p): The 2008 Cabernet Sauvignon Coach Insignia is a gorgeous, refined wine laced with expressive red fruit, flowers, mint and licorice. The elegant, feminine side of Cabernet comes through, along with a hint of mocha and spice from the presence of 8% Cabernet Franc in the blend. Hints of sweet herbs and licorice reappear on the finish. Today the 2008 looks to be a fairly early-maturing wine, but I don’t think that will be much of an issue based on how delicious it is.

Blend: 81% Cabernet Sauvignon,  10% Merlot, 9% Cabernet Franc.The opaque and dark ruby colored Cabernet blend, displays aromas of bright berries , nutmeg and mocha, Flavors candied cherry, blackberry and underlying mineral notes segue into a rich , round and long finish. On the palate, this wine is full bodied, rich and concentrated.

A solid example of a classic Left Bank Bordeaux. Here you find crisp, bright, red fruits, some strictness in the tannins and all the cedar, forest leaf, cigar box, peppery herbs and both, sweet with tart, red fruits; rich and solid, filled with firm tannins. This should offer pleasure for another 15-20 years.

In addition, all the champagnes released onto the market are certified as vegan.  "A rosé of great lightness, offering both vinosity and aromatic nuances, ideal for summer aperitifs."  Rosé  Brut is a delightfully light wine, yet it has a rich, vinous character too, a well-balanced freshness and delightful aromatic nuances. The Champagne has a bright orange-pink color with deep salmon pink reflections; develops a rich and concentrated nature : a pulpy fruity matter, underlined by a lemony acidity; fresh and seductive, embodied by notes of apricot, orange, kumquat, evolving towards hints of wild strawberry and blackcurrant. Variety: Chardonnay, Pinot Noir. Pairings : It will enhance your fish dishes such as tuna tataki. It also goes perfectly with desserts based on red fruits. Service temperature : 10 to 12°C  

Grapes: 75% Corvina, 20% Rondinella and 5% Negrara/Rossignola.Drying time is 3+months. Maturation in new french barriques plays a key role in balancing the tannins while subduing the more youthful of the aromas. Maceration time 28 days.Aged  total 36+ months:  for 12+ months in oak and in barriques for 15 months. Blended together for 4+ months. Matured in bottle at least for 9 months. Vigorous full-bodied wine, which is warm and inviting but not overly alcoholic. Very deep ruby red colour. Intense, persitent and complex smell of fruit. A perfect combination of silky tannins, warmth of alcohol and roundnessof glycerine all enhancing to enjoy hints of spices, dried cherries, chocolate and cranberries. Food coupling: Ideal with game, grilled meats, stews and well mature cheeses. To be served at 18°-20°C it is recommended to open the bottle 2 hours in advance before serving.
