VINTAGESummer 2015 was characterized by higher than average temperatures and lack of rainfalls. The weather situation induce us to an early harvest epoch thoughts. The heat, however, did slow the grapes development therefore we had an average harvest’s epoch which began on September 1 and ended on October 27. We immediately recognize the potential of an absolutely promising vintage when we saw the grapes quality brought to the cellar. The whites wines show enveloping and caressing fruit features
VINIFICATIONTwelve hour cold maceration in contact with the skin, fermentation in stainless steel, five months on the fine lees.
LOCATION / SOILHöfl unterm Stein in Söll near Tramin, at about 550 m above sea level. Heavy, loamy, chalky gravel with extremely low yields.

Barbera D’Alba DOC 2016 Caj, Giribaldi Organic, Piemonte
Grape: 100% Barbera, comes from the vineyard in Alba and is 380 meters above sea level. The vineyard is 3,96 hectares with thin marl calcareous soil and a South South West exposure. The vineyard is composed exclusively of Barbera , with different Italian cloning material. The training system is Guyot with 5.000 vines per hectare. The vines are grown organically and are certified with the CEE certification. A maceration of the grapes for 11 days with several pump overs during the day and a temperature-controlled fermentation. After a rest in stainless steel the wine matures in 30 hl semi new oak barrels for approx. 8 months. The wine is left to affine in the bottle for at least 3 months.

Variety: 100% Nebbiolo grape (grape of famous Barolo ) comes from the vineyard in Fontanaccia in an area called “Conca d’Oro” in the town of Montelupo Albese and is 380 meters above sea level. The vineyard is 1,68 hectares and the soil is fertile, loose and marl calcareous with a South exposure. The vineyard is composed exclusively of Nebbiolo, with Italian cloning material ( Michet, Lancia) The training system is Guyot with 5.300 vines per hectare. The vineyard is certified organic. The vineyard “conca d’oro” or “golden dip” gets its name from the colour of the leaves of these vines which in summer and Autumn turn golden.
Maceration of the grapes for 16 days at a controlled temperature of 28°C with several pump overs during the day. After a rest in stainless steel for 40 days the wine matures in oak barrels and “tonneaux” ( 225 and 500 lt) for 12-14 months until it reaches the right maturation, then is left to age in the bottle for at least 5 months. An intense ruby red colour with orange reflexes. On the nose evident roses, raspberries vanilla and balsamic notes. In the mouth it is dry, round and full bodied with young arrogant tannins, fruit syrup and cinnamon. Balanced and long in the mouth.

Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large oak barrels from Slavonia for 3 years. It rests for six months in bottles before being offered for sale.
Food-Wine Coupling: It pairs up well with all types of meat, both grilled and braised, and with aged cheeses.
