Barolo DOCG 2019, Carlin de Paolo

Barolo from Carlin de Paolo, a small family estate in Piedmont we've worked with for years. We import it ourselves, straight from their cellar to ours.

2019 was a classic year in the Langhe. A cooler, steady season let the Nebbiolo ripen slowly, and you taste it. Garnet in the glass with a brick edge. Sour cherry and dried rose first, then violet, dried herbs and a little spice. Firm tannins, bright acidity, and a long, savory finish.

How to drink it

Decant it, or open it an hour before dinner. Serve just below room temperature, around 64°F. It wants food: a ribeye, braised short ribs, mushroom risotto, tajarin with butter and truffle, or aged Parmigiano at the end of the meal. Stored well, it will keep getting better for years.
