Referred to as "Organic, Italian Caymus," the Gelso d'Oro has adark ruby red intense color. It consists of powerful aromas of the ripe grapes, black berry and currant fruit aromas, andtones of cocoa/dark chocolate, cinnamon, and cumin. The wine is extremely full bodied with a very balanced, rich, complex andextremely long finish.
Grape variety: 100% Nero Di Troia (Black of Troy), Puglia. The origin dates back to pre-Roman era.
Pairing:Great with rich and spicy first courses, backed and grilled red meat , game in rosemarie sauces.
Vinification : after night hand harvesting in mid September and gently pressing, the grapes placed for the first refinement in steel tank for 12 months then for second refining in wood barriques 1 ° E for 8 months and then in the bottle for another 6-8 months.
