Variety : 100% Schioppettino, a very special grape/wine; Planted 1976-2000. Its very rare grape can be found only in this high quality wines Italian region. light body wine close to Pinot Noire with very black pepper taste in the beginning which removes after 30-40 min  "breathing". Very elegant and full of taste wine. The grapes are collected on the basis of sensory analysis in the pre-harvest period: maximum maturation of skins and tannins is sought. This wine ferments at a controlled temperature of 26°C. It remains on its skins for a period of 20 days during which the of color and structure are extracted. It is refined in small oaken barrels with 500 l capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of this process, this wine is bottled without filtering to preserve its maximum integrity. It is then refined in the bottle for at least 4 months.

This bundle represents a taste of some of the most popular wines from the Collio DOC area in Northeast Italy. Limited availability . The Cabernet Franc is ruby red in colour, compact and dark. On the nose it is of great intensity and elegance, with both fruity and vegetable sensations. The nose-profile range moves from red-berried fruits such as black cherries, blackberry and blackcurrant to the vegetable aromas of bell pepper. The palate is important and elegant with a rich, full and pleasant body. It shows a freshness with velvety overtones. A long finish confirms and develops the nose. The Pinot Grigio is a brilliant, golden yellow with copper reflexes. Intense, ample and refined, starting with floral notes of acacia and hawthorn. It evolves towards fruity notes of peach, pineapple and pink grapefruit, with a delicate mineral note in the finish. Generous, soft and harmonic, it has the typical characteristics of its grape: a good acidity in a perfect balance with a pleasant softness and good structure. The Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio , a wine which expresses the vocation and potentiality of this area full of history, tradition and energy.
