 Ruby red in colour, compact and dark. On the nose it is of great intensity and elegance, with both fruity and vegetable sensations. The nose-profile range moves from red-berried fruits such as black cherries, blackberry and blackcurrant to the vegetable aromas of bell pepper. The palate is important and elegant with a rich, full and pleasant body. It shows a freshness with velvety overtones. A long finish confirms and develops the nose. The grapes are collected on the basis of sensory analysis in the pre-harvest period: maturation of skins and tannins is sought. This wine ferments at a controlled temperature of 26°C. It remains on its skins for a period of 12 days. It is refined 50% in steel tanks and 50% in small oaken barrels with 500 liter capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of the maturation process, it is bottled without filtering to preserve its maximum integrity. It is refined in the bottle for at least 4 months. Grape variety: 100% Cabernet Franc The Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio, a wine which expresses the vocation and potentiality of this area full of history, tradition and energy.
