Nero Viola This skillfully blended, dark ruby-red, baby Amarone produces sweet and fruity notes. A soft and incredibly smooth bouquet of red berry fruits, such as cherry and currant. In the mouth it is well bodied, generous, warm, and long-lasting. Extremely tasty wine.
Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large Slavonia 500/1000 oak barrels for 18 months. After this, the wine rests for six months in its bottle.
Serving Temperature: 62-66 °F / 17-19° C in large glasses.
Food Coupling: It pairs up well with all types of meat, both grilled and braised, and with aged cheeses.

The grapes for this wine are harvested exclusively by hand starting in mid September. After careful selection, the grapes are placed in small wooden crates and set aside to rest and dry.
