The grapes are collected on the basis of sensory analysis in the pre-harvest period: maximum maturation of skins and tannins is sought.
This wine ferments at a controlled temperature of 26 °C. It remains on its skins for a period of 20 days during which the color and structure of the wine is extracted.
It is refined in small oaken barrels with 500 l capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of this process, it is bottled without filtering to preserve its maximum integrity. It is then refined in the bottle for at least 4 months.
Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. The grapes for this wine are harvested exclusively by hand starting in mid September. After careful selection, the grapes are placed in small wooden crates and set aside to rest and dry. Located north of Beaune at the highest point of the slope, the 1er Cru “À l’Ecu” benefits from limestone-rich soils and exceptional exposure. It is one of the smallest Premier Cru sites in Beaune, shared among just three owners. The name “à l’Ecu” dates to the Middle Ages, referring to the enclosure where winegrowers once paid their taxes to the Dukes of Burgundy.
Hand-harvested fruit is vinified in open vats following traditional Burgundian methods, with gentle cap-punching and long maceration to extract depth and perfume. The wine is then aged in oak barrels (2 to 5 years old) for up to 24 months, emphasizing the purity of the terroir over oak influence.
