This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio , a wine which expresses the vocation and potentiality of this area full of history, tradition and energy. A great Sauvignon Blanc. 100% Ribolla Gialla, a very special grape/wine The grapes are collected on the basis of sensory analysis in the pre-harvest period, at the perfect balance point between the sugars and acidity of the berry. Grown on a hill in Collio. Grapes are soft pressing and fermented at a controlled temperature of 16 °C The wine is matured 50% in small oaken barrels with 500 l capacity, and 50% in steel tanks aged "sur lies" until the spring to enhance the typical properties. This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. This wine is aged in the bottle (2015-17 vintages), we taste the Ribolla Gialla every week to be sure of the current quality of it. 100% Sauvignon Blanc The differences in microclimates and soils make this territory unique and unrepeatable and they represent the source producing great wines. For this reason, two particular areas were selected, where the Sauvignon Petrus originates. The first one is a small vineyard, about 35 years old, located on a territory named flisch di Cormons, that is characterized by alternate layers of marlstone and sandstone of Eocene origin. The other vineyard is located just several kilometers away, but on a different hill of Pleistocene origin. It is called Flisch di Grivò. Both vineyards are exposed to the sun on their north-eastern hillside and the origin of their small grapevine plants is the result of an accurate selection. We strip leaves in the grape growing area 15 days before harvesting, in order to facilitate the synthesis and the aromatic compound evolution.

A wild urge for an imagined world, a place waiting to be explored by the curious mind of Marco Polo redux. TASTING NOTES: Complex aromas of cloves, litchi and rose petals. Extremely concentrated and structured on the palate, reminiscent of ripe fruit with Mediterranean notes and spicy reverberations. VINIFICATION: Twelve hours’ maceration on the skins, fermentation in steel, and maturation sur lie for 5 months.

In an instant, chaos returns to pure harmony … is this what we call happiness? VINTAGESummer 2015 was characterized by higher than average temperatures and lack of rainfalls. The weather situation induce us to an early harvest epoch thoughts. The heat, however, did slow the grapes development therefore we had an average harvest’s epoch which began on September 1 and ended on October 27. We immediately recognize the potential of an absolutely promising vintage when we saw the grapes quality brought to the cellar. The whites wines show enveloping and caressing fruit features VINIFICATIONTwelve hour cold maceration in contact with the skin, fermentation in stainless steel, five months on the fine lees. LOCATION / SOILHöfl unterm Stein in Söll near Tramin, at about 550 m above sea level. Heavy, loamy, chalky gravel with extremely low yields.

Straw yellow colour with golden reflections. Complex aromas with hints of white peach, lavender flowers, honey, vanilla and tropical fruits. Good structure, full, soft and long persistence. This Sancerre set comes from two small family domaines in the Loire Valley who make Sauvignon Blanc the real way. Three bottles from François Reverdy. Three from Domaine des Athénées. All clean, small-estate Sancerre with no additives and no industrial shortcuts. François Reverdy is an artisan. He farms a tiny parcel of Kimmeridgian marl by hand, harvests manually, and ferments with native yeasts. He refuses shortcuts like chaptalization and cares deeply about every detail. His organic Sancerre has tension, chalk, crushed shells, and a long saline finish. It is one of the most expressive organic Sancerres we have tasted. Domaine des Athénées works in the teaching cellar of the Cosne viticultural school. Their style is classic Loire Valley Sauvignon Blanc.
