Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large oak barrels from Slavonia for 3 years. It rests for six months in bottles before being offered for sale. Food-Wine Coupling: It pairs up well with all types of meat, both grilled and braised, and with aged cheeses. Very popular wine variety, Pinot Grigio, made in Venetian area. This wine is a delight to the eye with many hues changing from pale yellow to its characteristic sand colour, as well as to the nose with its slightly fruity bouquet accompanied by a light note of almonds. Grape variety: 100% famous Tokai, they are collected on the basis of sensory analysis in the pre-harvest period: good acidity and aromatic complexity are the desired qualities.  The grapes are grown on a hill with marl typical of the Collio region. Grapes are soft pressed and fermented at controlled temperature of 16 °C. The wine is matured in steel tanks, aged "sur lies," until the spring to enhance the typical properties. Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which⁹ are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio , a wine which expresses the vocation and potentiality of this area full of history, tradition and energy. This wine is aged in the bottle (2016-17 vintages), we taste the Friulano every week to be sure of the current quality of it. Certified EU Organic, this chardonnay has a pale yellow color, refined by soft greenish hues. The color shows off the innate and exemplary elegance of this chardonnay. The bouquet is fine and delicate, reminiscent of white fruits and bread crusts. Well structured in taste, this chardonnay reveals a soft, harmonious, markedly lingering flavour. It comes from Ca' d'Or's Grand Cru vineyards, planted with Chardonnay and Pinot Noir grapes on the gentle hills of Passirano. After 7 months for the first fermentation in small steel tanks  it rests for about 30 months, aging, maturing and refining in the bottle. in contact with selected lees, in the danmess and silence of the Cellar. A magical and romantic Franciacorta, in the balance between the delicacy of Chardonnay grapes and the strength, robustness and complexity of Pinot Noir grapes. A ruby red colour of a medium intensity; at the nose perfumes of mature fruit and marked sensations of sour cherry and currants, perceptions of tobacco; warm in the mouth, full with elegant Vanilla, scents of tobacco, liquorice wood and fruity undergrowth. Grape variety: Dolcetto, Pinot Nero, Nebbiolo & Barbera The Dolcetto comes from the area of Calupo, in Rodello. The Giribaldi vineyard is situated at the peak of a hilly area, 500 meters above sea level, with a Southwest exposure.The soil is Marl Calcareous with a good permeability. The Pinot Noir comes from the same area in Rodello; the Nebbiolo grapes come from Montelupo Albese in a perfect South exposure on hilly ground composed of medium marl calcareous soil; and the Barbera grapes come from Alba, at 350 meters above sea level. The training system is Guyot with 5,500 vines per hectare. This blend is obtained from the vinifications of Dolcetto, Barbera, Nebbiolo, and Pinot Noir grapes. Vinification is carried out in the traditional way - submerging the skins, at a controlled temperature of 30 °C ( in such a way as to obtain a good extraction of colour and and to maintain tannins) for a period of 7 days. The wine then undergoes a period of 24 months in tonneaux and barrique.
