This skillfully blended, dark ruby-red, baby Amarone produces sweet and fruity notes. A soft and incredibly smooth bouquet of red berry fruits, such as cherry and currant. In the mouth it is well bodied, generous, warm, and long-lasting. Extremely tasty wine.
Valpolicella Ripasso takes its name from the particular method used to produce this wine. In February, the wine obtained from the grapes harvested in October is left to re-ferment with the skins of the grapes used for Amarone and Recioto production. With this second fermentation, the body, color, and alcoholic content of the wine is increased. Aging takes place in large Slavonia oak barrels for 1.5 years. After this, the wine rests for six months in its bottle.
Serving Temperature: 62-66 °F / 17-19° C in large glasses.
Food Coupling: It pairs up well with all types of meat, both grilled and braised, and with aged cheeses.

Grape variety: 100% Cabernet Franc grapes are collected on the basis of sensory analysis in the pre-harvest period: maturation of skins and tannins is sought. This wine ferments at a controlled temperature of 26°C. It remains on its skins for a period of 12 days. It is refined 50% in steel tanks and 50% in small oaken barrels with 500 liter capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of the maturation process, it is bottled without filtering to preserve its maximum integrity. It is refined in the bottle for at least 4 months.
