It is refined in small oak barrels with 500 l capacity where the malolactic fermentation takes place for a period of 14-16 months. It is bottled without filtering to preserve its maximum integrity. It is then refined in the bottle for at least 4 months. Amazing bouquet of blackberries and ripe black fruits, violets, and black truffles, with hints of graphite and spice. Well balanced on the palate, remarkable soft power and finesse, fantastic structure and velvety round tannins and a long, complex finish. It’s so wonderful that you want to drink it when you taste it. Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio , a wine which expresses the vocation and potentiality of this area full of history, tradition and energy.

 Grapes variety : Corvina, Corvinone, Rondinella, Molinara and other grapes in small quantities. very limited stock.  Vinification: wine obtained with rigorously selected grapes which, after a period of 3-4 months of drying and over-ripening in the fruit cellar, are pressed and fermented at low temperatures. The refinement takes place in steel tanks for 6 months and subsequently in oak barrels for up to 36 months.. intense red color tending towards garnet, with strong aromas of berries, cherries and black cherries in alcohol. On the palate it recalls persistent flavors of plums, bitter almonds, licorice and various spices; extremely elegant full-body and long finish.  Food coupling: suitable with robust meat and game dishes, as well as mature and spicy cheeses. Serve at 18-20°C.

This etymology is almost identical to another of Sangiovese's many synonyms, Brunello. A few sources suggest that morello refers to a breed of horse unique to this part of Tuscany. Scansano's viticultural origins date back to Etruscan times, and the quality of the local wines has been documented for centuries.

As I wrote last year, in each vintage, one of the world’s greatest winemakers (Michel Rolland in 2005 and Denis Dubordieu in 2006) is chosen to focus on a single parcel of a given terroir, in this case, Chateau d’Arsac. Five-thousand cases will be produced in 2005, and everything, including viticulture, fermentation, upbringing, and bottling, is being controlled by the chosen winemaker who has full control over the winemaking team, the yields, the choice of fermenters, the style and type of barrels, the time in oak, and the manner in which the wine is bottled. Michel Rolland was fortunate to be chosen in 2005 as this is an exceptional vintage. It boasts classic richness, deep, smoky, black currant and sweet cherry fruit, a gorgeously opulent texture, decent acidity, high but sweet tannin, and a seamless, full-throttle mouthfeel. Aging in oak barriques for 8 months, and is bottled unfiltered. Ruby purple color with ripe red cherry aromas, black fruit and vanilla. In this vintage, we decided to pick these teinturiers along with the Zinfandel for cofermentation.  Bottled unfined and unfiltered.  A very exciting new vineyard designate. Tasting Notes: Deep ruby-purple.  Bordering on opaque.  An intoxicating nose of black raspberry and licorice allsorts is complemented by notes of blood orange and violet.  On the palate, an explosion of black raspberry fruit. Suave and harmonious tannins build through the long, spice-laden finish.  Like so many of our 2011s, there is great purity, freshness, and precision in this wine.  Optimum drinking for this beauty should be from late 2014 through the end of 2023.
