Grape variety: 100% famous Tokai, they are collected on the basis of sensory analysis in the pre-harvest period: good acidity and aromatic complexity are the desired qualities. The grapes are grown on a hill with marl typical of the Collio region. Grapes are soft pressed and fermented at controlled temperature of 16 °C. The wine is matured in steel tanks, aged "sur lies," until the spring to enhance the typical properties.
Collio DOC area is located in the extreme North of Italy, among Slovenia, Austria and the Julian Alps. This charming borderland features ample surfaces facing south, which⁹ are perfect for highly qualified viticulture. Here, vine growing dates back to pre-Roman times, and DOC was established in 1968. These hilly areas give origin to Collio DOC Pinot Grigio , a wine which expresses the vocation and potentiality of this area full of history, tradition and energy.
This wine is aged in the bottle (2016-17 vintages), we taste the Friulano every week to be sure of the current quality of it. Please be sure to let win rest at least 4 -5 days after arriving before opening and enjoying. Please do not purchase the product if the shelf life of this wine does not suit you.

The Dolcetto comes from the area of Calupo, in Rodello. The Giribaldi vineyard is situated at the peak of a hilly area, 500 meters above sea level, with a Southwest exposure.The soil is Marl Calcareous with a good permeability. The Pinot Noir comes from the same area in Rodello; the Nebbiolo grapes come from Montelupo Albese in a perfect South exposure on hilly ground composed of medium marl calcareous soil; and the Barbera grapes come from Alba, at 350 meters above sea level. The training system is Guyot with 5,500 vines per hectare. This blend is obtained from the vinifications of Dolcetto, Barbera, Nebbiolo, and Pinot Noir grapes. Vinification is carried out in the traditional way - submerging the skins, at a controlled temperature of 30 °C ( in such a way as to obtain a good extraction of colour and and to maintain tannins) for a period of 7 days. The wine then undergoes a period of 24 months in tonneaux and barrique.

The nose-profile range moves from red-berried fruits such as black cherries, blackberry and blackcurrant to the vegetable aromas of bell pepper. The palate is important and elegant with a rich, full and pleasant body. It shows a freshness with velvety overtones. A long finish confirms and develops the nose.
The grapes are collected on the basis of sensory analysis in the pre-harvest period: maturation of skins and tannins is sought. This wine ferments at a controlled temperature of 26°C. It remains on its skins for a period of 12 days. It is refined 50% in steel tanks and 50% in small oaken barrels with 500 liter capacity where the malolactic fermentation takes place for a period of 14-16 months. At the end of the maturation process, it is bottled without filtering to preserve its maximum integrity. It is refined in the bottle for at least 4 months.
