Grapes variety : Corvina, Corvinone, Rondinella, Molinara and other grapes in small quantities. Vinification: wine obtained with rigorously selected grapes which, after a period of 3-4 months of drying and over-ripening in the fruit cellar, are pressed and fermented at low temperatures. The refinement takes place in steel tanks for 6 months and subsequently in oak barrels up to 36 months.. intense red color tending towards garnet, with strong aromas of berries, cherries and black cherries in alcohol. On the palate it recalls persistent flavors of plums, bitter almonds, licorice and various spices; extremely elegant full-body and long finish.  Food coupling: suitable with robust meat and game dishes, as well as mature and spicy cheeses. Serve at 18-20°C.

The palate shows blackberry, stewed raspberry, wild fennel, rainier cherry, a touch of mint and white pepper—with a dusty, pleasantly drying tannin that is perfectly balanced by the wine's lively acidity. Porello was founded in 1930 by Cesare Porello when the region was not yet known for its wines, but rather its peaches. After WWII, his sons, Riccardo and Ettore, went against the tendency of the times, and dedicated themselves instead to working in the vineyards. Today, Marco Porello is the third generation of his family to craft wines from the family estate in Roero, located northwest of Alba on the left bank of the Tanaro River in the Piedmont region. Porello has 15 hectares of vines located in two of Roero’s twenty-three villages, and in some of the region’s most highly regarded vineyard locations, including Mombirone in Canale and Tanone in Vezza d’Alba. The grapes for this 100% Barbera were harvested by hand, destemmed and subsequently fermented in temperature controlled stainless-steel vats. After being gently pressed, the resulting wine was aged in a combination of wooden cask, stainless steel and cement and bottled unfiltered. Food pairing: antipasti,  grilled seasoned vegetables, stews, pastas, breaded veal, pork or chicken milanese with light sauces.

Francis Coppola acquired much of the property and began reconstructing the estate back in the mid-1970s. Located in Rutherford, this is an exemplary place for Bordeaux varietals in California. The name "Rubicon" is a classical reference to Caesar's march on Rome--'the crossing of the Rubicon'--meant to suggest a point of no return, appropriate for Niebaum-Coppola's flagship production. A proprietary blend, this is predominantly Cabernet Sauvignon from the estate's prime vineyard blocks planted to the original Niebaum Cabernet clone, with only small amounts of Merlot and Cabernet Franc.

During Prohibition, it managed to obtain a contract to supply sacramental wine to churches, meaning it was able to remain in production between 1920 and 1933 when the Volstead Act was repealed. This makes Beaulieu one of the longest continually operational wineries in the United States.The company was founded in 1900 by Georges de Latour. His background was not in winemaking or vineyard management, so he hired famed enologist André Tchelistcheff to come to Rutherford to establish the estate. Tchelistcheff went on to create the prestige cuvée Library Selection Rutherford Reserve Cabernet Sauvignon, and mentored many of the next generation of Napa winemakers, including Robert Mondavi, Mike Grgich and Joe Heitz. Producer The deep roots of Beaulieu Vineyard were first planted back in 1900, when founder Georges de Latour noticed similarities with his native Bordeaux and declared the Napa Valley ideal for winemaking. He followed up on this belief by planting vineyards in Rutherford with grafted, phylloxera-resistant French vines. The Cabernet Sauvignons that de Latour crafted from these grapes gave the world its first taste of California’s promise as a world-class winemaking region. Deep ruby red colour. Intense bouquet and persistent nose of ripe red fruit with cherry prevalence and notes of chocolate. Crisp and harmonious, with a spicy, mineral end and cherry aftertaste. Grapes: 100% Sangiovese from Cantina di Montalcino. Late (middle of October) accurate  harvest of the grapes that must be healthy and ripe.         Production Area: the hilly areas of the municipality of Montalcino (Siena). Vinification: Pressed by natural gravity, long maceration of the peels for 15-20 days, to increase the structure and the power of Sangiovese and extract tannins and colour. To be able to tame the polyphenols present a careful processing with delicate repassing. Aging in Slavonian oak barrels for 36 months (24 months in barrique and 12 months in large oak barrels) and and another 12 months(min) in bottles.

Riesling/Sauvignon Blanc blend. Vinification :  The Riesling was produced by pressing whole grapes and fermenting them in stainless steel vats. The grapes of the Sauvignon were macerated for twelve hours prior to pressing, then a part of the must was placed into barrels for fermentation. All of the wines were stored for eight months on the yeast before beginning the assemblage in March. The wine has been in the bottle since April.  Tasting notes: The wine presents a bright, green yellow with golden reflections. The nose is evocative of gooseberry peaches, pineapple and passion fruit. On the palate, it reveals a lively flavor full of finesse, minerally texture and juicy acidity, with citrus fruit in the aftertaste with exotic echoes. Food-Wine Coupling: pleasant accompaniment to asparagus, fish and shellfish.
